i do something like this all the time. I would have throw in some quick cooking vegetables like mushrooms and zucchini or broccoli inside the foil packets to cook with the fish.

Hi laura. the dish looks spectacular. I have a best friend who is fitness instructor. this recipe is easy for him because he lives alone but the problem is, he doesn't take butter at home? What can he use instead of butter? If he uses olive oil, does he need to wrap the dish in aluminum foil tightly like in the video? Pls let me know. my best friend would love this recipe and not only it's easy to cook for himself, also there's no skin on the dish as he also doesn't eat fish with the skin on.
